Food practice as an object of study in sociology has grown in the last decades, the rituals, objects and processes involved in food is a broad and significant phenomenon for populations around the world. This research has the purpose of identifying the processes of configuration of the alimentary practice in the Spanish migrants residing in Bogotá. Through a qualitative methodology where interviews, observations and the creation of a participative and reinforcing instrument were key to the investigation, it was found that three main elements are important to understand food practices: Spanish cultural identity, the variables that define it and finally, the meanings and the dynamic of Spanish culinary spaces that are located in the city of Bogotá. Due to this research, it was possible to understand how this migrant group re-signifies their stay in a new territory through food and the diversity of elements they use to experience the typical flavors of their gastronomy.
