Resumen
Malnutrition is a public health problem, addressed in Food Security, whose roots arise from various factors that influence people's behaviors and from the stage of educational institutions it has been essential to study this scourge that affects different immersed social groups in the classrooms and begin at an early age and continue into adulthood. For this reason, the interest of the research starts with the detection of cases in students of the first grade of elementary school. In the methodological process, the qualitative, descriptive-exploratory approach and the socio-critical paradigm are used. The sample consisted of 26 parents to whom a semi-structured interview and a survey were applied. The results show that there is food availability for households, however, access to basic products for family support is scarce due to limited economic capacity. Food consumption is strongly related to cultural practices, influencing preparation and preferences. The risk factors that influence eating habits are family, economics, culture and education, aspects that determine conditions that do not favor first grade boys and girls because it is insufficient to guarantee nutrition that allows normal development. In this way, from the pedagogical perspective, the research information is important since it is necessary to bring families closer to improving their knowledge about eating habits and thus contribute to reducing the risk of suffering from a disease due to malnutrition.
