Resumen
The following academic article wants to highlight the importance of Mexican and Colombian cuisine in the transmission of identity and tradition through culinary flavors and knowledge, because family recipes are often bequeathed from generation to generation. These recipes have mostly come or come with different family and regional stories, teachings or anecdotes. This transmission of knowledge has been affected by the masification and transnationalization of the kitchen, generating that it is not necessary to learn or teach the family or typical recipes, leaving behind the interaction that developed when being in the kitchen and generating a fragmentation of communication in society. The article will take as axis the dialogical communication, since this resumes everything necessary to generate the complete transmission of culinary knowledge and knowledge orally, and this process will be supported in the different cultural expressions such as films and books, which take up the importance of culinary in the tradition and identity of Mexican and Colombian culture.
