Resumen
According to the Policy for the knowledge, the safeguard and the promotion of the traditional food and kitchens of Colombia. The traditional kitchens as cultural heritage, fulfill a cohesive function, generate, for excellence, feelings of identity, belonging and historical continuity, around them families, friends, etc. gather, foment the associative links of the people, reaffirms and promotes values such as solidarity and generosity.
Each culinary system refers to a tradition and a particular symbolic universe and a "culinary order" that contains, among other elements: Rules of behavior, particular Aesthetics, Rituals, Prescriptions and culinary prohibitions.
In addition to this, it must be taken into account that there are certain critical factors related to the production of knowledge, the safeguarding and promotion of traditional food and cooking, such as:
Little research on the processes of traditional Colombian cuisine and its historical references
There are no documentation and reference centers
Ignorance of our biodiversity and its food potential.
