Estudio de las Modificaciones Fisicoquímicas Originadas por la Inclusión de Minerales en la Matriz del Almidón de Papa y Plátano

El almidón es un biopolímero ampliamente utilizado en la industria, sin embargo, rara vez se utiliza en su forma nativa, haciendo necesaria su modificación. Esta investigación estudió el efecto de la inclusión de iones de potasio, calcio y magnesio en las propiedades fisicoquímicas del almidón de plátano y papa. Se prepararon soluciones iónicas en cinco concentraciones entre 0.0 y 0.3M. Se estudiaron gelatinización, degradación térmica, viscosidad, poder de hinchamiento, cambios morfológicos y estructurales. Los resultados mostraron que la adición de iones aumentó el poder de hinchamiento e índice solubilidad. Los tres iones afectaron la temperatura de gelatinización de las dos fuentes, en las que hubo un corrimiento de hasta 4°C para el almidón de plátano, y 2°C para el almidón de papa, ambos modificados con iones de Mg2+. El cambio más significativo en el perfil de viscosidad se mostró en la región final. Los tres iones permitieron el reordenamiento de las cadenas poliméricas, pero el magnesio mostró una mayor tendencia hacia la recuperación de la viscosidad sobre el almidón de plátano. Para el almidón de papa, en esta región se observó la aparición de oscilaciones en el perfil, dando indicios de que la mezcla no era tan homogénea, esto se presentó para los tres tipos de iones. En el análisis termo gravimétrico, se observó una menor temperatura de degradación para los almidones modificados con iones. El análisis estructural mostró que, para concentraciones altas de potasio (0.20 y 0.30 M), la adición no se llevó a cabo en los dos almidones, y en los difracto gramas de los dos almidones aparecen fases del cloruro de potasio. Todos los resultados mostraron que la inclusión de iones produjo cambios en las propiedades fisicoquímicas de los dos almidones, pero los iones hicieron más efecto en la gelatinización y el perfil de viscosidad del almidón de plátano. Para los dos almidones, el magnesio tuvo un mayor efecto en sus matrices poliméricas, lo que podría deberse a su alta electronegatividad y bajo peso molecular. This research studied the effect of the inclusion of potassium, calcium and magnesium ions on the physicochemical properties of plantain and potato starch. Ionic solutions were prepared in five concentrations between 0.0 and 0.3M. Gelatinization, thermal degradation, viscosity,swelling power, morphological and structural changes were studied. The results showed that the addition of ions increased the swelling power and solubility index. The three ions affected the gelatinization temperature for both sources, which shifted up to 4°C for plantain starch, and 2°C for potato starch, both modified with Mg2+ ions. The most significant change in the viscosity profile was shown in the final region; the three ions allowed the rearrangement of the polymer chains, but the magnesium showed a greater tendency towards the recovery of the viscosity on the plantain starch. For the potato starch, in this region the appearance of oscillations in the profile was observed, giving indications that the mixture was not so homogeneous. This was presented for all three ions. In thermogravimetric analysis, a lower degradation temperature was observed for the ion modified starches. The structural analysis showed that for higher concentrations of potassium (0.20 and 0.30 M), the addition was not carried out in the two starches, and in the diffractograms of the two starches appear phases of the potassium chloride. All the results showed that the inclusion of ions produced changes in the physicochemical properties of the two starches, but the ions made more changes in the gelatinization and the viscosity profile of the plantain starch. For the two starches the magnesium had a greater effect in their polymer matrices, which could be due to their high electronegativity and low molecular weight
