The objective of this thesis was to investigate the meaning of the quality of bovine milk in dual-purpose systems of the Piedemonte Araucano. This was built in four categories: technological (A), hygienic (B), safety (C) and sustainability (D). The study was carried out among 351 farms selected through non-probability sampling with information collected at the farm level. 17 variables were selected and a conglomerate analysis (two-stage cluster) was used to define niches, compared with ANOVA tests and mean differences for Tukey and Tambane. A binary logistic regression was applied to assess the impact of the variables associated with each quality category and their relationship with the viability of the farm. The level of quality of the milk was 60.6% with differences between quartiles of 21.4 points, reflecting its heterogeneity. The AB quality categories presented differences with the CD quality categories (34.8% vs 76.0%, respectively). The cluster analysis determined by the proportion of the number of variables implemented in each category and the variables of category D and the number of cows on farms showed: niche 1, 76.0%, niche 2, 93% and niche 3, 55%. The analysis of the level of quality in the context of the niches and the municipal order showed higher values for niche 1 (72.4%) and the municipality of Saravena (68.7%) (p <.0.05). The effect of the niche analyzed through quantitative variables showed a shorter time from the farm to the transformation of the product into cheese, a higher number of cows per hectare and a lower somatic cell count (p <0.05). The relative use of variables by quality categories showed a higher average use and overall percentage for niche 1 (p <0.05). Categories AB and CD were different between niche 1 and niche 3 (p<0.05). High percentages of appropriation were observed for the variables of the CD categories: racial group, manual milking, mineral salt, vitamins and endo and exo-parasites control with values higher than 93% in niche 1 compared to niche 3 (p < 0.05). The functional characterization of the niches presented significant differences for the variable’s UGG / ha and milk production (l / cow / day) being lower and higher respectively in niche 3 (p <0.05). The somatic cell count affected the concentration of milk fat at concentrations greater than 600,000 cells / ml (p<0.05), with a direct effect on the concentration of total solids (p <0.05). The significant relationship between viability and the quality category was significant for the global and for the categories associated with the safety and sustainability of production (p <0.001). In particular, for these categories, significant effects were observed in the coefficient B of the analysis of binary regression for the variables: use of canteens, UFS / ha, cows / ha and the racial group. The analysis of the exponential of the coefficient B and its confidence interval showed the plasticity of the relationship between the viability of the dual-purpose production system and the quality variables described. El objetivo de esta tesis fue investigar el significado de la calidad de la leche bovina en sistemas de doble propósito del Piedemonte Araucano. Este fue construido en cuatro categorías: tecnológicas (A), higiénicas (B), de seguridad (C) y de sostenibilidad (D). El estudio fue realizado entre 351 fincas seleccionadas mediante un muestreo no probabilístico con información recolectada a pie de finca. Se seleccionaron 17 variables y se usó un análisis de conglomerados (cluster bietápico) para la definición de nichos, comparados con pruebas de ANOVA y las diferencias promedias por Tukey y Tambane. Una regresión binaria logística fue aplicada para valorar el impacto de las variables asociadas con cada categoría de calidad y su relación con la viabilidad de la finca. El nivel de calidad de la leche fue del 60,6% con diferencias entre cuartiles de 21,4 puntos, reflejando su heterogeneidad. Las categorías de calidad AB presentaron diferencias con las categorías de calidad CD (34,8 % vs 76.0%, respectivamente). El análisis de conglomerados determinado por la proporción del número de variables implementadas en cada categoría y las variables de la categoría D y el número de vacas en fincas mostró: nicho 1, 76.0%, nicho 2, 93% y nicho 3, 55%. El análisis del nivel de calidad en el contexto de los nichos y el ordenamiento municipal mostró valores mayores para el nicho 1 (72.4%) y el municipio de Saravena (68.7%) (p<.0.05). El efecto del nicho analizado a través de variables cuantitativas mostró un menor tiempo de la finca hasta la transformación del producto en quesos, un mayor número de vacas por hectárea y un menor conteo de células somáticas (p<0.05). El uso relativo de variables por categorías de calidad mostró un promedio de uso mayor y porcentaje global para el nicho 1 (p<0.05). Las categorías AB y CD fueron diferentes entre el nicho 1 y el nicho 3 (p<0.05). Altos porcentajes de apropiación fueron observados para las variables de las categorías CD: grupo racial, ordeño manual, sal mineral, vitaminas y control de endo y ecto- parásitos con valores superiores al 93% en el nicho 1 comparado con el nicho 3 (p<0.05). La caracterización funcional de los nichos presentó diferencias significativas para las variables UGG/ha y producción de leche (l/vaca/día) siendo menor y mayor respectivamente en el nicho 3 (p<0.05). El recuento de células somáticas se asoció a la concentración de grasa de la leche a concentraciones mayores de 600.000 células/ml (p<0.05), con un efecto directo sobre la concentración de sólidos totales (p<0.05). La relación significativa entre la viabilidad y las categorías de calidad fue significativa para el global y para las categorías asociadas con la seguridad y sostenibilidad de la producción (p<0.001). En particular para estas categorías se observaron efectos significativos en el coeficiente B del análisis de regresión binaria para las variables uso de cantinas, UFS/ha, vacas/ha y el grupo racial. El análisis del exponencial del coeficiente B y de su intervalo de confianza mostró la plasticidad de la relación entre la viabilidad del sistema de producción de doble propósito y las variables de calidad descritas
