Resumen
In spite of major innovations in the way of providing the service and optimize the quality of in the tourist services during the last decades, the literature on the subject is scarce. This study is a work that intends to reduce this deficiency.
From models of quality management and analysis of the conditions under which restaurants currently operate Corridor Alameda Historical Center, proposes actions to improve the quality of these, such as innovation strategy.
It also analyzes the change in organizational routines from the introduction of innovations and in this case, since the establishment of new premises of quality and innovation strategy for tourism establishments mentioned above.
Therefore, this thought-provoking research will hopefully initiate processes of change for improvement in the quality of service establishments under study.
