Resumen
The fabrication of mezcal from many species of Agave, is a cultural and economic activity that is developed in more 10 states of the Mexican Republic, The objective was to determine the modalities of mezcal production and marketing ways this beverage, by the producers of the the municipality of Nombre de Dios. This study was conducted in three phases, the first was the location and selection of rustic or artisanal production units and technologically, for the production of mezcal. In the second phase, direct interviews and surveys to producers and the third was related to the status of raw materials and sustainable alternatives. The strong tradition of craftsmanship in making mezcal affects the quantity and quality for lack of a policy of standardization and product certification according to the norm of mezcal Regulatory Council for price improvement and consequently the income of producers and resource sustainability of agave.
