Resumen
On the journey to Lima in the year 2016, it was possible to observe important cultural, social and economic aspects of the citizens manners. Among them, a study of the Peruvian gastronomy was made. This sector is not only distinguished by the taste of the food, but also for the details regarding the whole process of making the plates. It begins with the growth and planting of the food, continuing with its commercialization in central markets and ending in the final consume by the people. As it is a wide topic, this paper is focused on the Minka central food market, the biggest in Lima.
