Seu óleo é rico em carotenoides e tocoferóis e é usado pela população local no tratamento de diversas enfermidades e, portanto apresenta grande importância econômica. A interesterificação do óleo de buriti pode melhorar ainda mais as propriedades biológicas e o seu efeito sobre as propriedades físico-químicas das nanoemulsões. Os ácidos graxos predominantes no óleo antes e após a reação de interesterificação foram o ácido oléico e palmítico. As classes de triacilgliceróis encontrados no óleo de buriti foram de 39% para palmítico-oléico-oléico (POO) e 32,7% para oléico-oléico-oléico (OOO), após a reação o óleo de buriti interesterificado por 6 horas apresentou 34,2% de POO e 36,3% de OOO e no óleo interesterificado por 24 horas os valores obtidos foram de 32,6% para POO e 37% para OOO. O conteúdo de compostos fenólicos foram maiores para as amostras interesterificadas. O teor de ?-caroteno não apresentou diferença significativa entre as amostras analisadas. As nanoemulsões produzidas com o óleo interesterificado apresentaram menores diâmetros e não alteraram a carga líquida das gotículas. Na análise para avaliar a atividade antioxidante pelo método de redução do ferro (FRAP) não houve diferença da atividade entre as nanoemulsões, já para o método de substâncias reativas ao ácido tiobarbitúrico (TBARS), observa-se que a interesterificação do óleo de buriti reduziu a formação de peróxidos. Estes resultados mostram que a reação de interesterificação enzimática produziu um lipídeo estruturado que quando nanoemulsionado apresentou melhoria na estabilidade físico-química Abstract: Buriti is a fruit that grows on palm trees in the Amazon region. Their oil is rich in carotenoids and tocopherols and is used by the local population for the treatment of various diseases, and therefore presents economic importance. The interesterification buriti oil can further improve the biological properties and their effect on the physico-chemical properties of nanoemulsions. The predominant fatty acids in oil before and after interesterification reaction were oleic acid and palmitic acid. Triacylglycerol classes found in the buriti oil were 39% for palmitic-oleic-oleic (POO) and 32.7% for oleic-oleic-oleic (OOO), after the reaction interesterified buriti oil for 6 hours showed 34.2% POO and 36.3% of OOO and interesterified oil for 24 hours the values were 32.6% for POO and 37% for OOO. Phenolic compounds were higher for samples interesterified. ?-carotene content was no significant difference between the samples analyzed. Nanoemulsions produced with the interesterified oil had smaller diameters and did not change the net charge of the droplets. In the analysis to evaluate ferric-reducing antioxidant potential (FRAP) there was no difference between the antioxidant activity nanoemulsion, to the method of thiobarbituric acid reactive substances (TBARS), was observed that the interesterification buriti oil reduced the formation of peroxides.
