This review presents the work done at LASEFI (LAboratory of Supercritical Technology: Extraction, Fractionation, and Identification of vegetable extracts) that belongs to the Department of Food Engineering (DEA), College of Food Engineering (FEA), State University of Campinas (UNICAMP). Only, the research papers related to the extraction of antioxidant from aromatic, condimentary, and medicinal plants were considered. The plants used are both native as well as exotic; some of them are cultivated commercially and the non-cultivated ones came from sustainable harvesting.
