The effect of temperature variation (30 to 40°C) and pH control to 5,7 at 30 and 37°C on the ethanol and levan production during sucrose fermentation in batch process by Zymomonas mobilis CP4 were estudied. Growth rate and ethanol production were optimum at 34°C. Levan output decreased with increasing temperature and pH control during the fermentation. The best yields were obtained when pH was controled to 5,7 in both temperatures studied.
