Resumen
At the milk collection center “Compud”, located in Chunchi canton, province of Chimborazo, a Manual of Good Manufacturing Practices (GMP) was evaluated, designed and implemented, with the aim of reducing the risks of contamination of crude milk during the stages ranging from the milking, transport and cooling. Microbiological analyzes were performed taking 10 samples of 10 ml of milk before and after the implementation of the Manual of Good Manufacturing Practices (GMP) respectively. In which it was determined the presence of total coliforms of 20 UFC/ml and 0 UFC/ml, (Colony forming units/ milliliters). Value that is within the required by the Mexican Official Standard NOM-243-SSA1-2010, the results were analyzed using the T`student (Excel 2010). With the use of the Check List for the diagnosis and application of BPM, this determined that the Micro-enterprise complied with 46.25% before; and, 75.50% after implementation respectively.
When comparing these values, which allowed to evidence that the application of the Manual of Good Manufacturing Practices (GMP) caused relevant changes, by means of the training which indicated the advantages of the quality and healthiness of the crude milk. It is recommended that this Micro-enterprise should continue rigorously applying what is stipulated in the GMP in Ecuador and obtain the ARCSA certificate.
