Resumen
This research was carried out at Dairy business “Paraíso”, located in Canton Salcedo, Cotopaxi Province, it is designed and implemented a Best Practices Manual Milking, facing milking area in order that the raw material complies with the requirements Standard INEN force, research was carried out from an analysis to identify the most vulnerable parameters that occurs when takes hand milking, because the dairy companies looking to deliver quality products to market; therefore they prefer to work with large producers, leaving small producers out of the milk market, which affects the same economic losses for suppliers of raw materials and for industrializing company. Data were recorded before and after the implementation from manual by a physical-chemical and microbiological analysis of raw milk; to change the initial status of the corrective action plan it was implemented through training of staff performing this activity, focusing on meeting all parameters covering good milking practices. The results of earlier vs then analyzed by statistical test “t student”, comparing values that allowed evidence that the application manual caused significant changes. The present condition of raw material is within the parameters set by the Standard INEN. It is recommended to promote the implementation of the manual to large and small producers.
