Resumen
The raw milk hygienic standard was assessed in a processing plant at Cattlemen Industrial Society S.A. located in Machachi city, Mejia Canton from Pichincha province, in order to design a good handling manual for milk production (BPPL). A historical database was used from milk providers, which was analyzed with descriptive statistics and measures to compare and contrast them: routing time and temperature in tanks with Duncan sample (P <0.05); and climate seasonality with chi square. The results obtained from raw milk collection in the years from 2013 to 2015 showed values from 5:24:24 to 3:07:54 minutes reductase which shows good quality of milk; one cryoscopic point from 0.51 to 0.53 C, presence of antibiotics with 0.60%; acidity 15.67 D with a density of 1.03; presence of microorganisms was 102,48 and 78.74 CFU.ml-1X103 colony forming units (CFU, for summer and winter periods; also 300 CFU.ml-1X103 of microorganisms reduction and increased reductase about 3 hours, it will increase financial bonus with 0.0031 and 0.015 USD.L-1 of milk for suppliers, considering the responses it suggested the use of BPPL manual for training farmers in order to create liability in health quality and use of antibiotics in cows
