The project of SUSTAINABLE DEVELOPMENT PROGRAM IMPLEMENTATION FOR THE AGROECOSYSTEMS OF THE VULNERABLE POPULATION IN GUZO, PENIPE CANTON [Escuela Superior Politécnica de Chimborazo (ESPOCH) — Gobierno Auténomo Decentralizado (GAD) PENIPE] was carried out in the Guzo community located at Penipe canton Chimborazo province. The physicochemical, microbiological and sensory characterization and handling of goat milk were diagnosed. The sample was 5 dairy goats for each of the following three sectors (Guzo—Playa; Gaza-Central and Guzo-Alto), that is, a total of 15 goats. The research took 120 days. Having done the diagnosis, the values were as follows: acidity from 1.56% to 1.70%. pH from 6.55 to 6.67. total solids 13.42% and fat content 3%. From the reductase evaluation, the results were from 2:24:00 to 2:54:48 hours, that is to say, good quality milk. The aerobic mesophilic microorganism presence was from 786, 00 to 10,002.00 CFU/ml. The maximum values of the somatic cell count were from 6.94 to 6, 84 soc/cm3x 105, so it is necessary to have a better hygiene standards when milking goats. It is recommended to use the cryoscope to detect adulteration of milk with water. To define hygiene standards before, during and after milking goats and to introduce training programs for the goat breeders to learn and assure quality of goat.
