Resumen
This paper presents the resullts of the development of a technology for microencapsulation of Neotropical Juglans oil (tocte) by mean of spray drying. For which a mechanical oil extraction was performed in a PITEBA press, giving greater extraction yield 79%. The concentration influence of encapsulating agents on the efficiency and performance of the microencapsulation process was evaluated. This process made it possible pilot scale obtaining spherical microcapsules with and without pores on the surface with higher encapsulation efficiency of 65%, less than 3m size and linoleic acid content of 69.93%, oleica cid 19.17% and linoleic acid 4.24%, demonstrating the technology reproducibility in different scales and possible functionality in reducing risk for cardiovascular disease. Without micro encapsulating lipids and encapsulated micro proved stable over time reaching a percentage of humidity less than 10%. The designed process allowed a máximum use of natural resources (tocte seed) proving to be economically feasible. Besides the waste plant material (tocte) of Neotropical Juglans was delivered to the Technical University of Ambato for further analysis and applications.
