Diseño y construcción de un equipo reductor de tamaño de Berro, Espinaca, Zanahoria

Resumen
El diseño y construcción de una picadora de martillos se realizó con el objeto de reducir el tamaño de la espinaca, zanahoria y berro a un diámetro deseado de 0,5-1 cm, el mismo que servirá dentro del ámbito profesional, educativo y didáctico en el Laboratorio de Procesos Industriales de la Facultad de Ciencias en la Escuela Superior Politécnica de Chimborazo.
Para el diseño del equipo, se procedió a determinar experimentalmente en el laboratorio la humedad óptima con la cual la materia prima debe salir desde el secador tipo armario, esta es de 10%; por lo que, la máquina cuenta con un motor de potencia de 2 hp indispensable para el correcto funcionamiento de la misma, una fuerza de 2057,4 N para romper las hojas de berro y espinaca y picar la zanahoria, un torque de 31,8897 J que permite el giro completo de los martillos en el momento del picado, áreas de martillos de 0,0019355 m2 con los cuales el berro, espinaca y zanahoria es picado a un diámetro de 0,5 cm, una tolva de alimentación con un volumen de 0,00125 m3 que abastece el ingreso de materia prima, una producción diaria de 240 kg/h; dichas características permiten el picado total del material. Como resultado se obtuvo una picadora de martillos con un rendimiento del 89,7% y una eficiencia del 73,96%, siendo resultados positivos y de alta gama que indican que se puede procesar la materia prima al diámetro de 0,5-1cm. Se recomienda utilizar la picadora de martillos dentro del laboratorio para futuras investigaciones dentro del campo educativo como productivo.
