Resumen
In the Piggis Pigem Cia.Ltda sausage Factory, located in the Azuay Province,
Cuenca Canton, lactic acid as a disinfectant in bovine carcasses was used
during different times of action, with four replicates per treatment, under a
completely randomized design. The size of the experimental unit was five cases
per repetition, different times influenced statistically (P<0,01) in the microbial
population reduction obtaining 0.33 logarithm UFC/cm (Colony Forming Units
per square centimeter) for mesophyll aerobic, 1,12 logarithm UFC/cm (Colony
Forming Units per square centimeter) in total coliforms and 1.89 logarithm
UFC/cm² (Colony Forming Units per square centimeter) in fecal coliforms, the
aerobic microorganisms were significantly reduced to 831,73 UFC/cm? (Colony
Forming Units per square centimeter) when lactic acid was applied for 15
minutes, total coliforms at 45 minutes application of lactic acid its microbial
population is reduced to 10,23 UFC/cm(Colony Forming Units per square
centimeter), fecal coliforms valúes down to 6.92 UFC/cm? (Colony Forming
Units per square centimeter) in the 45 minutes application treatment. The
physicochemical titration reports pH optimum values 5,76 approaching an ideal
pH which contributes with the bovine carcass conservation. When applying the
sprinkiing with a solution of o, 5% lactic acid of the carcass, the cost by
sprinkling to each carcass is increased by 11 cents, is recommended to use the
solution of lactic acid as a disinfectant in one liter amounts per carcass, which
proves the effectiveness of the lactic acid as disinfectant decreasing the bacterial
burden bovine carcasses.
