Resumen
"Was designed and built a Simple Effect Evaporator with Horizontal coil to obtain
Arequipe from whole cow's milk, which has been previously studied and controlled
with respect to legal norms of the country. The equipment is installed in the Laboratory
of Industrial Chemistry, Faculty of Sciences of the Polytechnic School of Chimborazo.
The design of the evaporation equipment was in good literature review is mainly
determined equations that are used for correct sizing Simple Effect Evaporator with
Horizontal coil as well as their effective functioning; also used for team-building steel
plate cut and welded steel due to the dimensions calculated for the design, the tean's
main feature is the horizontal coil is located inside of the pot as the heat transfer is
optimal to be in contact with 100% food and thus minimizing heat loss.
The device can be profitably applicd to the food industry as it was possible to obtain a
concentrated product, which has been subjected to tests for Physical - Chemical and
Microbiological and verified compliance with relevant national regulations, obtaining a
team performance 80%.
Operational practices have enabled the production using 75 pounds of Sweet Milk just
70 liters of milk, achieved through the use of steam as a heating element that is more
economical and cost effective than electric resistance as a primary source of energy."
